I just have to share my latest favorite with you. It's one of those salads that I wouldn't have typically tried. But when a friend introduced me to a recipe that used broccoli slaw, spinach, and chicken, I started searching for some vegetarian recipes using broccoli slaw.
Broccoli is known to be an excellent cancer-fighting food. Among the cruciferous vegetables (think cauliflower, cabbage, kale), broccoli has the highest amount of sulforaphane.
We shared a quart of this soup with our friends from church. It disappeared quickly, and we had a lovely visit.
I think it's time for a soup recipe again. The other day, my husband opened the fridge and asked, "Where's that soup you made?" To his dismay, it was already gone. But, ahh, I'm always listening when my husband enjoys and wants more of something. If he likes it, then I'm pretty sure you will too!

I am happy to report I have completed over four weeks of eating vegetarian. Notice I say "happy," and I'm not joking. My taste buds are definitely adjusting, and my food cravings are completely different. They say that once you start eating very healthfully, you start craving healthy foods.
